    Noodle Pudding

    List of Ingredients

    Noodle Pudding

    for the pudding:
    1 c. cottage cheese, (1/2 lb.)
    1 8oz. pkg. cream cheese, room temperature, (1/2 lb.)
    1 c. sour cream, (1/2 pint)
    2 extra large eggs
    1/4 c. sugar (splenda, if desired)
    1/2 c. milk
    dash salt
    1/2 c. melted butter, (1 stick, 1/4 lb.)
    1 8oz. package wide noodles,cooked and drained
    1/2 c. white raisins, optional

    for the topping:
    1/2 c. melted butter, (1 stick, 1/4 lb.)
    1/3 c. light brown sugar
    1 c. crushed corn flake crumbs

    Preheat oven to 325. Butter well or grease an 8x8x2 inch baking pan.
    for the pudding:
    In the pot you cooked your noodles in, mix the cottage cheese, cream cheese, sour cream, eggs, sugar, milk, salt, noodles and raisins all together.
    Spread the mixture into the baking pan.

    for the topping:
    Spread the topping evenly on top of the noodle pudding and bake for 1 hour.

    May use low fat cottage cheese, sour cream and milk, or splenda for the sugar, and I Can't Believe It's Not Butter, if desired.
