Oatmeal Custard Pudding

8 egg yolks
1 c. white sugar
1/2 tsp. cinnamon
1 quart scalded milk
1 tsp. vanilla extract
1 quart cooked oatmeal, cooled off
2 c. berries, optional, for garnishing
Recipe
Preheat oven to 350. Butter a 4 c. baking dish.
Beat together the yolks, sugar, and cinnamon.
Stir in the milk and vanilla.
Then fold in the oatmeal.
Pour the mixture into the baking dish.
Place in a larger pan.
Then fill with 1" water up the sides of the baking dish.
Bake for 55 - 60 minutes.
May be served hot or chilled, topped with berries.
Makes 6 servings.
