    Orange Pudding Cups

    Orange Pudding Cups

    2 eggs, yolks and whites separated
    1/2 c. sugar
    4 tbsp. butter
    1/2 tsp. vanilla
    1/4 c. frozen orange juice concentrate, thawed
    2 tbsp. flour
    1/4 tsp. salt
    1 c. milk

    Preheat oven to 325. Butter 6, 6oz. baking dish cups.
    Beat egg whites until stiff.
    Remove 2 tbsp of the sugar, and blend into egg whites, one tablespoon at a time. Set aside.
    Cream butter with the rest of the sugar until fluffy.
    Beat in the egg yolks, orange juice and vanilla.
    Stir in flour and salt.
    Slowly stir in milk.
    Gently fold in the egg whites until fluffy smooth.
    Spoon into baking cups and set in a pan with about an inch of water.
    Bake for 30 minutes.
    Remove from water and cool.
    Invert onto serving dishes.
    Makes 6 servings.
