    Pineapple Tapioca Pudding

    1 (8 ounce) can crushed pineapple, with juice
    1/3 cup white sugar
    1/2 teaspoon cinnamon
    2 eggs, beaten
    1 tablespoon quick-cooking tapioca

    Heat oven to 350 degrees.
    In a small baking dish, mix the pineapple with juice, sugar,
    cinnamon, eggs, and tapioca.
    Bake 30 minutes in the preheated oven, until set.
    Makes 4 servings.
