Cinnamon Rhubarb Muffins

List of Ingredients
for the muffins:
1/2 c. firmly packed brown sugar
1/4 c. butter, softened
1 c. sour cream
2 eggs
1 1/2 c. flour
3/4 tsp. baking soda
1/2 tsp. ground cinnamon
1 1/2 c. sliced 1/4" wide rhubarb
for the topping:
1 tbsp. white granulated sugar
1/2 tsp. ground cinnamon Recipe
Heat oven to 375. Grease or paper line a muffin pan.
for the muffins:
Stir together flour, baking soda and cinnamon and set aside.
Combine brown sugar and butter in large bowl. Beat until mixture is creamy.
Add sour cream and eggs. Continue beating until well mixed.
Blend flour mixture into sour cream mixture just until moistened.
Gently stir in rhubarb.
Spoon into muffin pan.
for the topping:
Stir together sugar and cinnamon. Sprinkle about 1/4 tsp. on top of each muffin.
Bake for 25 to 30 minutes or until lightly browned.
Cool in pan for 5 minutes, then remove from pans.
Makes 12 muffins.
