    Easy Apple Rhubarb Cake

    2 c. diced rhubarb
    3 c. canned apple pie filling
    1 3oz. pkg. strawberry gelatin
    1 c. sugar
    1 tsp. ground cinnamon
    1 dry white cake mix
    3 c. mini marshmallows
    whipped cream or vanilla ice cream, optional

    Recipe



    Preheat oven to 350. Need a 9x11x2" glass baking pan.
    Mix rhubarb and apple pie filling together and put in the bottom baking pan.
    Mix the gelatin, sugar and, cinnamon together and pour over the fruit.
    Cover with the marshmallows.
    Pour the dry cake mix on top of everything.
    Bake for 45 - 50 minutes.
    Cool to room temperature and then refrigerate until ready to serve.
    Garnish with whipped cream or vanilla ice cream, if desired.
