Fish Fillets With Rhubarb Sauce

1 1/2 c. chopped rhubarb
1/4 c. + 2 c. water
2 quarter sized pieces fresh ginger root, peeled julienned
1/3 c. apple cider vinegar
1 c. chopped sweet onion
1 chopped red bell pepper
1/4 tsp. salt
4 cod fillets, or whatever is your favorite typeRecipe
Place rhubarb, the 1/4 c. water and ginger root in a small heavy saucepan.
Simmer for 5 minutes and set aside.
Combine cider vinegar with the 2 c. water and bring to a rolling boil.
Add the onion and bell pepper. Cook for 2 minutes and drain well.
Mix rhubarb and vinegar mixes.
Season with salt.
Broil the fillets 4 - 6" from heat for 10 minutes per inch of thickness, or until fish is opaque and flakes easily with fork.
Serve sauce with fish.
