    2 2/3 c. + 2 tbsp. flour, separated
    1 1/2 c. packed brown sugar
    1 tsp. baking soda
    1 tsp. salt
    1 egg
    1 c. buttermilk
    1/2 c. vegetable oil
    1 tsp. vanilla
    1 c. finely chopped rhubarb
    4 to 6 tsp. butter
    4 to 6 tsp. white granulated sugar

    Preheat oven to 350. Grease four 6x3x2" or two 8x4x2" loaf pans.
    In large mixing bowl, stir together the 2 2/3 c. flour, brown sugar, baking soda, and salt. Set aside.
    In another mixing bowl, combine egg, buttermilk, oil, and vanilla.
    Stir wet mixture into dry mixture and blend well.
    Toss rhubarb with the 2 tbsps. flour.
    Fold rhubarb into batter and pour into pans.
    Dot each loaf with 2 to 3 tsps. butter.
    Sprinkle each loaf with 2 to 3 tsps. white granulated sugar.
    Bake 40 minutes for small loaves, 55 minutes for large loaves, or until a tester comes out clean.
    Cool in pans 10 minutes.
    Remove from pans and let cool thoroughly on wire rack.
    Serve warm or cool.
    Makes 4 small or 2 large loaves.
