    Rhubarb Bread Pudding #2

    4 c. bread cubes
    2 c. scalded milk
    2 eggs
    1 tbsp. vanilla
    2 c. diced rhubarb
    2 c. freshly sliced strawberries
    1 1/2 c. sugar
    2 tsp. grated lemon rind
    1/4 c. butter

    Preheat oven to 375. Butter a 12x9x2" baking dish.
    Mix the rhubarb, strawberries, sugar and lemon rind together. Set aside.
    Slowly add the eggs and vanilla to the milk.
    Mix the milk mixture with the bead cubes.
    Add the fruit mixture and stir lightly.
    Pour into the baking dish.
    Dot with the butter.
    Bake for 1 hour.
