    Rhubarb Cake #1

    1/2 c. shortening
    1 1/2 c. sugar
    1 egg
    1 tsp. vanilla
    2 c. + 1 tbsp. flour, separated
    1 tsp. baking soda
    1/2 tsp. salt
    1 c. buttermilk
    2 1/2 c. chopped rhubarb, in 1/2" pieces
    1/2 c. softened butter
    2 tsp. cinnamon
    1 c. packed brown sugar

    Preheat oven to 350. Very lightly grease 9x13x2" pan.
    Sift together the 2 c. flour, baking soda, and salt and set aside.
    Cream shortening and sugar together.
    Beat in egg and vanilla.
    Add sifted ingredients to creamed mixture alternately with buttermilk.
    Toss rhubarb with the 1 tbsp. of flour and mix gently into batter.
    Spoon into pan and smooth surface.
    Combine butter, cinnamon and brown sugar together and sprinkle over batter.
    Bake for 50 - 60 minutes.
    Makes 8 - 10 servings.
