    4 1/2 c. diced rhubarb
    1 1/4 c. + 1 c. white granulated sugar, separated
    2 tbsp. butter, softened
    1/2 c. shortening
    1 egg
    1 c. flour
    1 tsp. baking powder
    pinch salt
    1/2 c. milk

    Recipe



    Preheat oven to 350. Need a 12x9x2" pan.
    Put rhubarb across bottom of pan.
    Sprinkle with 1 1/4 c.sugar.
    Dot with butter.
    Sift flour, baking powder, and salt together; and set aside.
    Cream shortening and 1 c. sugar together in a bowl.
    Beat in the egg.
    Add flour mix alternately with milk to make a creamy mixture.
    Drop by tablespoonsful over rhubarb/sugar/butter.
    Bake for 40 minutes.
