Rhubarb CoffeeCake #1
1 1/2 c sugar
1/2 c shortening
1 egg
1 c buttermilk
1 t salt
1 t baking soda
1 t vanilla
2 c flour
2 c finely chopped rhubarb
topping:
1 T butter
1 T cinnamon
1/2 c sugar
Mix everything except the rhubarb together in a large bowl.
Stir in rhubarb. Pour into 9 x 13 pan.
Combine topping and sprinkle over batter.
Bake in preheated oven at 350°F for 30-35 minutes.
