    Rhubarb Crumble Cake

    for the cake:
    2 1/2 c. chopped rhubarb
    1/2 c. + 1 1/2 c. white granulated sugar
    1/2 c. butter
    1 egg
    1 tsp. vanilla
    2 c. flour
    1 tsp. cinnamon
    1 tsp. baking soda
    1 tsp. baking powder
    1 tsp. salt
    1 c. buttermilk or sour milk

    for the crumble topping:
    1/2 c. shortening
    1 1/2 c. sugar
    1 1/2 c flour
    1 tsp. cinnamon
    1 c. finely chopped nuts, optional

    Recipe



    Preheat oven to 350. Lightly grease a 9x13x2" pan.
    for the cake:
    Mix together the rhubarb and the 1/2 c. sugar, set aside.
    Cream butter and 1 1/2 c. sugar together.
    Beat egg and vanilla in with butter mixture.
    In another bowl, mix flour, cinnamon, baking soda, baking powder and salt together and beat into butter mixture alternately with buttermilk.
    Fold flour mixture into rhubarb mixture.
    Pour batter into pan.

    for the crumble topping:
    Mix shortening and sugar into together.
    Mix flour, cinnamon and nuts together and combine with the sugar mixture.
    Sprinkle over top of cake.
    Bake for 1 hour or until tester comes out clean.
