    1 c. + 1/4 c. flour, separated
    4 tbsp. powdered confectioners sugar
    1/4 c. butter
    2 beaten eggs
    3/4 tsp. salt
    1 1/2 c. sugar
    2 c. rhubarb, chopped to 1/2" pieces

    Recipe



    Preheat oven to 350. Grease a 9x9x2" pan.
    Mix 1 c. of flour, powdered sugar and butter together.
    Press into bottom of pan.
    Mix eggs, salt, sugar, 1/4 c. of flour, and the rhubarb together.
    Pour on top of other crust layer.
    Bake for 30 minutes.
    Makes 6 servings.
