    List of Ingredients




    1 c. butter flavor shortening
    1 c. sugar
    2 eggs
    1 c. diced raw rhubarb, sweetened to taste or cooked rhubarb, sweetened to taste
    3 c. flour
    1 c. quick oats, (can crush regular ones to make quick ones)
    1/2 tsp. salt
    2 tsp. cinnamon
    1 c. chopped nuts, optional
    2 c. raisins
    2 tsp. baking soda

    Recipe



    Preheat oven to 350. Lightly grease cookie sheets.
    Sift together flour, oats, salt and cinnamon. Set aside.
    Cream together shortening and sugar.
    Blend eggs into sugar mixture.
    Add rhubarb and mix thoroughly.
    Add dry ingredients and blend.
    Stir in raisins and nuts.
    Drop by teaspoonfuls on cookie sheets and bake for 18 - 20 minutes.
