    1/2 c. sugar
    1/4 c.+ 1 3/4 c. cold water, plus
    1 6oz. pkg. strawberry gelatin
    1 tbsp. lemon juice
    2 c. diced fresh rhubarb
    1 8oz. pkg. cream cheese, chilled + diced
    1 sliced banana

    Recipe



    Spray a 6 cup mold with non stick cooking spray.
    In a saucepan, combine sugar, rhubarb, and 1/4 c. water. Cover and cook over a medium heat for 3 minutes or until the rhubarb is tender. Stir occasionally.
    Cool slightly, then drain, reserving the syrup.
    Add enough water to syrup to equal 2 c. and return to the saucepan. Bring to a boil and then stir in the strawberry gelatin until dissolved.
    Add the 1 3/4 c. cold water and the lemon juice and stir until combined.
    Chill until it is of a thick syrupy consistency.
    Add rhubarb, cream cheese and bananas.
    Turn into the mold and chill until set.
