Rhubarb Puff

4 c. rhubarb, cut into 1/2" pieces
1/2 c. + 1 1/2 c. white granulated sugar
1/2 c. shortening
1/4 tsp vanilla
1 c. flour
1/2 tsp. baking powder
1/3 c. milk
1 beaten egg whiteRecipe
Preheat oven to 325. Need a 7x11x1/2" glass pan.
Scatter the rhubarb in the bottom of the pan.
Sprinkle with the 1/2 c. sugar.
Mix the remaining 1 1/2 c. sugar and shortening together. Add vanilla and set aside.
Mix together the flour and baking powder.
Add the flour mixture alternately, with the milk, to the sugar mixture until well blended.
Fold in the beaten egg white last.
Pour over top of the sugar and rhubarb in the pan and bake for 45 minutes.
