A fruity, refreshing dessert.
You can use sugarfree gelatin, low fat pudding and reduced fat crust as well.
List of Ingredients
3 c. chopped rhubarb
1 3oz. pkg. strawberry gelatin
1 1/2 c. milk
1 3oz. pkg. vanilla instant pudding mix
1 vanilla wafer or graham cracker crustRecipe
Place rhubarb in microwave safe bowl and microwave for 6 - 8 min. on high or until rhubarb is softened, stirring every 2 minutes.
Stir in gelatin until it is dissloved.
Cool completely.
In a small bowl, beat milk and pudding on low for 2 min.
Fold rhubarb into pudding mixture.
Spoon into crust.
Cover and refrigerate until firm.
Makes 8 servings.
