Rhubarb Salad Dressing

Recipe Introduction
I would say this is kind of like a raspberry vinaigrette flavor.
List of Ingredients
4 thinly sliced stalks rhubarb
1/4 c. sugar
water
2 tbsp. red wine vinegar
salt and pepper to taste
6 tbsp. vegetable oilRecipe
Place the rhubarb in a wide saucepan.
Sprinkle with sugar and add enough water to cover by 1".
Bring to a boil simmer, uncovered, for approximately 2 minutes.
Remove from the heat and pour through a sieve into a bowl.
Return the liquid to the pan.
Stir in the vinegar, salt and pepper.
Cook over a high heat, uncovered, until mixture is reduced to 1/2 c.
After reduced, remove the pan from heat and whisk in the oil.
Pour over salads and serve at once.
