    1 c. + 1/4 c. flour, separated
    1/3 c. powdered confectioners sugar
    1/3 c. butter
    1 c. white granulated sugar
    2 lightly beaten eggs
    1 tsp. vanilla
    3 c. finely chopped rhubarb

    Recipe



    Preheat oven to 350. Grease an 11x7x2" baking pan.
    Combine 1 c. flour and powdered sugar; cut in butter until mixture resembles coarse crumbs.
    Press into the bottom of the pan and bake for 12 minutes.
    In another bowl, combine granulated sugar, the 1/4 c. flour, eggs, and vanilla in a bowl.
    Stir in rhubarb and pour batter into the warm crust.
    Bake for 35 - 40 minutes or until tester comes out clean.
    Cool on wire rack. Serve warm if desired.
    Store in refrigerator.
    Makes 16 servings.
