    Rhubarb Streusel Muffins

    for the streusel topping:
    1 tbsp. unsalted butter
    1/3 c. packed light brown sugar
    1/2 tsp. cinnamon
    1/2 c. chopped nuts, optional

    for the batter:
    1/2 c. packed light brown sugar
    1 large egg
    2 /3 c. canola or vegetable oil
    1 tsp. vanilla extract
    1 c. orange juice
    2 1/2 c. flour
    1/8 tsp. salt
    1/2 tsp. cinnamon
    1/2 tsp. baking soda
    2 tsp. baking powder
    1 1/2 c. diced fresh rhubarb

    Preheat oven to 375. Coat muffin pan with cooking spray or use paper liners.

    for the streusel topping:
    Mix the sugar and cinnamon together.
    Cut in butter to make coarse crumbs.
    Add the nuts and set aside.

    for the batter:
    Stir together the flour, salt, cinnamon, baking soda and baking powder. Set aside.
    In a large mixing bowl, mix combine the brown sugar, egg, oil, and vanilla together to blend.
    Stir in the orange juice.
    Blend the dry ingredients into the wet ingredients just to partially combine.
    Fold in the rhubarb.
    Fill muffin pan evenly with the batter.
    Sprinkle the streusel topping generously on each muffin.
    Place in the oven and reduce the heat to 350.
    Bake 25 - 30 minutes or until muffins are golden to medium brown.
    Makes 9 - 12 muffins, depending on the size of the muffin pan.
