Rhubarbably Cobbler

1 c. cake flour
3 tbsp. + 3/4 - 1 c. sugar (depending on sourness of fruit)
1/2 tsp. salt
1 1/2 lbs. fresh cut rhubarb, in 1" pieces
4 tbsp. unsalted butter, cut in pieces
1 c. + 2 tbsp. heavy cream, whippedRecipe
Preheat oven to 375. Grease a 9x12x2" baking dish with butter and set on a baking sheet.
Sift flour, the 3 tbsp. sugar and salt into a bowl and set aside.
Spread the chopped rhubarb over the bottom of the baking dish.
Sprinkle with the 3/4 - 1 c. sugar, coating evenly.
Dot with the butter.
Gently stir flour mixture with the cream to make a sticky dough and spread over the fruit, covering evenly.
Bake for 45 minutes or until the fruit is bubbling and the top is golden.
Serve with ice cream, additional whipped cream or a custard.
Makes 8 servings.
