    Strawberry Rhubarb Crumb Pie #2

    Strawberry Rhubarb Crumb Pie #2

    Filling:
    1 egg
    1 c.sugar
    2 Tbls. flour
    1 tsp. vanilla
    3 c.fresh rhubarb, cut into 1/2" pieces
    3 c. Fresh strawberries, halved
    1 unbaked pie shell

    Crumbs:
    3/4 c. flour
    1/2 c. packed brown sugar
    1/2 c. quick-cooking oatmeal
    1/2 c. butter or margarine

    In a mixing bowl, beat egg, beat in sugar, flour and vanilla; mix
    well. Gently fold in rhubarb and strawberries. Pour into pie shell.
    For topping, combine, flour, brown sugar and oats in a small bowl; cut
    in butter till crumbly. Sprinkle over fruit. Bake at 400 degrees for
    10 mins. Reduce heat to 350; bake for 35 to 45 mins. or till golden
    brown and bubbly. Serve with vanilla ice cream.
