6 cups milk
1/2 teaspoon salt
2 teaspoons granulated white sugar
1 cup heavy cream, whipped (optional)
cinnamon sugar (1/2 cgranulater white sugar mixed
...with 3 teaspoons ground cinnamon), optional
Combine the rice, milk, salt and sugar in the top of a double boiler.
Cook over boiling water for 2 hours, stirring occasionally, until
the rice is creamy and the milk is absorbed.
Cool for 30 minutes and fold in the whipped cream.
Serves 6 to 8.
Using whip cream is optional as the rice is good without it, too.
This creamy rice is the base for various desserts when
combined with fruit soup, fresh fruit, or cinnamon sugar.
Spoon chilled fruit soup over still warm Riisipuuro, or
serve fresh fruits, cubed, over it, or simply sprinkle
servings with cinnamon sugar.
