Fried Rice with Sausage + Vegetables

List of Ingredients
2 cups uncooked long grain rice,
...picked over and washed
1 tablespoon Canola oil
2 minced garlic cloves
crisp cooked vegetables,
...like carrots, peas, broccoli
4 - 6 Chinese sausage links, cut into 1/4 inch pieces
salt to taste
1 1/2 tablespoons soy sauce
1 1/2 tablespoons fish sauce
1 1/2 teaspoons dried cilantro, or
...1 tablespoon freshly chopped
black pepper to taste
2 large beaten eggs Recipe
Cook the rice according to package directions, except
use slightly less water than recommended. Set aside.
In a large frying pan, heat the oil.
Add the minced garlic and vegetables.
Saute until the garlic is softened.
Place in a bowl and set aside.
Cook the sausage in the frying pan. Drain on paper towels,
and wipe excess grease from the pan with a paper towel.
Place the rice, vegetables, and sausage back into the frying
pan. Stir and mix well over a medium heat.
Add the beaten eggs and stir until the eggs are cooked.
(Or, the eggs may be cooked separately, cut up and added
at this time.)
Add the salt, soy and fish sauces, cilantro and pepper.
Makes 4 - 6 servings.
