    Herbed Rice #1

    1 1/2 c. uncooked long grain rice
    1 small diced onion
    1/2 finely shredded carrot
    1 stalk diced celery
    1/4 c. butter
    3 c. low salt chicken broth
    1 tbsp. dried parsley
    1/2 tsp. thyme
    1/4 tsp. poultry seasoning
    1/2 tsp. minced garlic
    1/4 tsp. salt
    1/8 tsp. pepper

    In a large non stick pan, using a medium heat, saute rice, onion, carrot and celery in the butter. Stir frequently until rice is browned.
    Mix parsley, thyme, poultry seasoning, garlic, salt and pepper together. Set aside.
    Pour the broth into rice and stir.
    Add spices and stir.
    Bring to a boil, cover, reduce heat and simmer for 15 - 20 minutes or until most of liquid is absorbed.
    Turn off heat and let set for approximately 10 minutes.
    Fluff and serve.
    Makes 6 servings.
