Onion Rice

List of Ingredients
1 tbsp. vegetable oil
1 chopped red onion
1 c. long grain white rice
1 tsp. ground black pepper
2 c. chicken brothRecipe
Heat the oil in a large saucepan on a medium heat.
Add the onion and saute for a few minutes.
Add rice and stir.
Continue to cook until the onion is clear.
Add pepper and broth.
Bring the mixture to a boil.
Cover.
Reduce heat to low and simmer, covered, for about 20 minutes.
Uncover the pan, fluff with a fork and serve!
Makes 6 servings.
