Pineapple Rice #1, plain
1 cup brown rice
3/4 cup pineapple juice
1 1/4 cups water
1/2 cup almonds, whole, raw
1/2 teaspoon sesame oil
1 cup pineapple chunks
1 teaspoon soy sauce
pinch cayenne pepper
Cook the rice in the water and pineapple juice.
Bring to a boil, then turn the temperature down to
low and let it sit covered for 1 hour.
When the rice is finnished add the almonds,
sesame oil, pineapple, soy sauce and cayenne
pepper.
Stir and cook on medium low for 10 minutes, just
to let the flavors combine.
