Rice + Carrot Ring
3 c. cooked rice
2 c. grated carrot
1/4 c. grated onion
2 tbsp. flour
1 10 3/4oz. can cheddar cheese soup, undiluted
1 egg, slightly beaten
1 tsp. salt
1/4 tsp. ground black pepper
1 tsp. worcestershire sauce
dash hot sauce
10oz. frozen peas
Preheat oven to 350. Grease an 8" ring mold.
Combine rice, carrots, onion, and flour in a large bowl.
Add cheese soup, egg, salt, pepper, worcestershire
sauce, and hot sauce, mixing well. Pack mixture into
mold. Bake for 30 minutes. Allow to cool 10 minutes.
Cook peas according to package directions; drain.
Invert rice ring onto platter, and fill center with peas.
Garnish with carrot curls, if desired.
Makes 6 servings.
