Risotto Rice

1 1/2 tbsp. butter
1 c. raw rice
3 c. hot beef/chicken/vegetable stock
...(use whatever you like to use for sauteing)
1 16oz. bag frozen or 15 1/2oz. can corn or peas

Melt the butter in a frying pan and saute rice over a medium/high heat until translucent.
Add 1/2 c. of the stock and stir.
Reduce heat to a medium/low and cook until the rice absorbs the stock.
Add another 1/3 c. of the stock and stir.
Continue stirring and adding the stock for about 20 minutes.
Add the vegetable(s) and continue to cook for another 5 - 10 minutes or until the vegetable(s) are done.
Makes 6 servings.
