Spinach Rice w/cheddar + pimiento

If you like rice, this is the dish for you.
Not too complicated and worth the trouble.
Spinach Rice w/cheddar + pimiento
1 1/2 Tablespoons butter
1/1/2 cups cooked rice ( use brown )
2 chopped green onions
1/4 cup sliced almonds
1, 10 2/3 ounce can cream of celery soup
salt as desired
ground black pepper
1, 10 ounce package frozen chopped spinach,
...thawed and thoroughly drained
1 cup shredded Cheddar cheese
1 or 2 Tablespoons drained, chopped pimiento ( optional )
Melt butter.
Stir fry rice, onions, and almonds until onions are tender,
stir often , about 4 minutes.
Stir in the soup, salt and pepper.
Bring to boil, reduce heat and cover. Simmer 15 minutes.
Stir in spinach.
Cover and simmer 10 minutes.
Remove from heat, add cheese and pimientos.
Makes 4 or 5 servings.
