Beef Cabbage Casserole
1 small head of cabbage, cut into cubes
2 large potatoes, peeled and 1/4'd
1 large onion, diced
1 1/2 pounds of hamburger
1 teaspoon ground cumin
1/4 cup butter, (1/2 stick), or margarine
1/2 teaspoon salt, or to taste
1/4 teaspoon ground black pepper, or to taste
dash of paprika
Salt and pepper the cabbage to taste and cook until well done.
Drain. Salt and cook potatoes until well done. Drain. Mash the
potatoes with butter but make sure they are on the dry side.
Place hamburger in large skillet, add onion and cook until well
done. Drain off all the fat. Stir in the cumin, salt and pepper. Line
a baking dish that is at least 3 inches deep with the cabbage.
Place meat mixture on top of the cabbage. Cover the top with the
mashed potatoes. Sprinkle with paprika. Bake at 350 degrees F.
for 25 minutes.
