WWII's S - O - S
1 pound ground beef, (many people use chipped beef
...instead of the ground, choice is yours)
1 1/2 Tablespoons butter
3 Tablespoons all-purpose flour
1 cup beef broth
1/2 cup evaporated milk
salt and pepper to taste
Brown the ground beef in a medium skillet over medium/high
heat, until meat is no longer pink. Drain excess fat and
set aside.
Melt the butter in a medium saucepan over medium heat.
Slowly add the flour, stirring constantly, to form a brown roux.
(Roux is a term that refers to a thickening sauce, usually made
with fat and flour- Smoothly blended without lumps.)
Pour in beef broth and milk, mixing well.
Add beef, then season with salt and pepper to taste.
Serve over Biscuits, Toast, Potatoes or Rice
Makes 4 servings.
This may be multiplied to serve 4,000.
