    rotisserie - Barbequed Spareribs

    2 slabs pork spareribs, about 6 pounds

    for the basting sauce:
    1/2 cup soy sauce
    1/4 cup red wine vinegar
    1/4 cup honey
    2 tablespoons minced ginger root
    2 cloves garlic, peeled, ends removed, minced
    2 tablespoons cilantro, minced
    1 tablespoon sherry

    Rinse the spareribs and remove excess fat and gristle.
    Thread each whole sparerib on the spit in an accordion fashion.
    Place a drip pan if able underneath meat. Cook on low about 1/2 hour.
    Meanwhile in a small bowl mix together the basting ingredients.
    After the ribs have cooked 1/2 hour, begin basting with the basting sauce
    every 10 minutes.
    Cook about one hour or until the ribs are cooked through and tender. Remove
    from spit and serve.
    Serves 6 to 8.
