    rotisserie - Chicken Cordon Bleu

    rotisserie - Chicken Cordon Bleu

    6 skinless boneless chicken breast halves
    1 tablespoon Dijon mustard
    6 thin slices ham
    6 thin slices swiss cheese
    2 eggs beaten with 2 tablespoons water
    2 cups Italian seasoned bread crumbs

    Wash and thorooughly pat dry the chicken breasts.
    Pound the chicken breasts lightly between two sheets of plastic wrap with a
    flat mallet until they are a 1/4 inch thick.
    Place the breasts smooth side down on a work surface and spread each with
    1/2 teaspoon mustard.
    Top with a slice of ham and cheese. fold in the sides and roll up the
    breasts.
    Secure with a toothpick.
    Dip the chicken rolls in the egg mixture and then in the breadcrumbs to coat
    well.
    Rotate the chicken in the flat standard basket for 35 to 40 minutes or until
    lightly browned and cooked through.
    Remove toothpicks and serve.
    Serves 6.
