    Marinated Roasted Vegetable Skewers

    List of Ingredients




    for the marinade:
    1/2 cup Olive oil
    6 tablespoon balsamic vinegar
    2 tablespoons minced fresh basil
    2 cloves garlic, minced
    salt and pepper to taste

    the vegetables:
    1 red bell pepper, cut into 1/4inch slices
    16 cherry tomatoes
    16 white button mushrooms, stems removed
    8 green onions, cut into 1 1/2inch pieces

    Recipe



    Prepare vegetables and place in a large bowl or food storage bag.
    Combine marinade ingredients and pour over vegetables.
    Cover and marinade 1 to 2 hours at room temperature.
    Drain off marinade and skewer vegetables on kebob rods.
    Rotate the skewered vegetables for 20 to 25 minutes or until vegetables are
    slightly brown, but still crunchy.
    Remove skewers from the gear wheels and slide the vegetables off onto
    serving plates.
    Serves 6.
