Rice + Cherry Stuffed Rotisserie Chicken

3/4 cup wild rice blend
1/2 cup tart dried cherries
5 tablespoons butter, divided
1 large onion, peeled and finely chopped
1 large clove garlic, peeled and chopped
1/4 cup parsley, chopped
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1, 3 1/2 pound fresh whole chicken
4 fresh dill sprigsRecipe
Cook rice according to package directions; set aside to cool slightly.
Meanwhile, soak dried cherries in warm water to cover until soft.
Drain and chop coarsely; set aside.
Heat a large skillet over medium-high heat.
Melt butter and saute onion and garlic until tender, about 3 minutes.
Reduce heat and stir in cooked rice, cherries, parsley, salt and pepper.
Remove from heat to cool slightly.
Rinse chicken with cold water and pat dry with paper towels.
Stuff rice mixture into cavity of chicken.
Rub outside of chicken all over with remaining tablespoon butter.
Place on spit and cook until done, about 35 minutes.
To serve, cool slightly, then cut into quarters. Garnish with dill sprigs.
Serves 4.
