rotisserie - Steak w/Chili Mushroom Sauce
2 tablespoons olive oil
1 medium onion, chopped
2, 7ounce cans chopped green chilies
1 teaspoon minced fresh jalapeno chili
1/4 teaspoon salt
2 tablespoons minced fresh cilantro
4 tablespoons unsalted butter
1/2 pound mushrooms, sliced
1 1/2 pounds steaks, (sirloin or rib eye work well)
rub mixture:
6 tablespoons paprika
2 tablespoons ground black pepper
2 tablespoons chili powder
2 tablespoons salt
2 tablespoons sugar
1 tablespoon garlic powder
1 tablespoon onion powder
1 1/2 teaspoons cayenne pepper
To make the sauce, heat the oil in a small saucepan and add the onion.
Cook until soft. Add the chilies, oregano, and salt.
Simmer for 5 minutes.
Stir in the cilantro.
Keep warm.
Heat butter in a small skillet and cook the mushrooms until soft.
Keep warm.
Stir all the rub mixture ingredients together.
Coat the steaks liberally with the rub mixture.
Place in the flat standard basket.
Cook 18 minutes for rare or 22 minutes for medium.
If not brown enough, position the basket facing the heating coils
and turn the pause to sear switch off.
Rotate 2-3 minutes more on each side.
Top with mushrooms and chili sauce.
Serves 4.
