rotisserie - Sweet Pork Kebobs
1, 12ounce jar apricot preserves
1, 8ounce bottle Russian salad dressing
1 envelope onion soup mix
1 1/2 pounds boneles pork loin or tenderloin, cut into 1 inch cubes
1 red bell pepper, cut into 1-inch cubes
2 zucchini, cut into 1inch pieces
Combine the preserves, salad dressing and onion soup mix in a bowl.
Add the pork cubes, cover and marinate for 4 to 24 hours
Thread meat alternating with red pepper and zucchini cubes on kebob skewers.
Rotate 25-30 minutes or to desired doneness.
Remove pork cubes and vegetable cubes to serving plates.
Serve with cooked white rice.
