rotisserie - Lemon Chicken Kebobs
4 skinless boneless chicken breast halves
1 zucchini, cut into 24, 1inch rounds
1 red bell pepper,cut into 24 91 inch) squares
1 teaspoon grated lemon zest
3 tablespoons fresh lemon juice
1 1/2 teaspoons sugar
3/4 teaspoon dried oregano
salt and pepper
Cut the chicken breasts lengthwise into 4 strips.
Combine the chicken strips, zucchini, red pepper, lemon zest and juice,
sugar, oregano and salt and pepper to taste in a large bowl.
Toss to coat well.
Cover and let stand 15 minutes.
Thread a zucchini, red pepper, then weave a strip of chicken on a kebob
skewer, repeat and then finish with another zucchini and pepper.
Repeat 7 more times.
Rotate kebobs for 25 to 30 minutes or until the chicken and vegetables
are cooked through.
Serves 4-8.
