Fried Pasta Snacks

2 c. raw colored corkscrew pasta, cooked al dente to pkg. directions
3 3/4 c. corn oil, (900 milliliters)
1/4 c. white granulated or powdered confectioners sugar
1 tbsp. grated lemon or orange peel
1/8 tsp. saltRecipe
Place waxed paper on a baking sheet.
Make sure the pasta is drained well.
Spread the pasta in a single layer on the baking sheet and let dry for 20
minutes.
Pour the oil into electric frying pan, filling no more than 1/3 full and
heat to 375.
Carefully add the pasta, a few at a time.
Fry for about 1 minute, turning once, or until golden brown.
Drain on paper towels.
Repeat until all the pasta is fried, adding oil as needed.
Place the sugar, lemon/orange peel and salt into a medium bowl and stir
until well mixed.
Toss the pasta with the sugar mixture until coated.
Store in a tightly covered container.
Variations:
Chili Fried Pasta Snacks - omit the sugar and lemon peel. Use 1 1/2 - 2 tsp.
chili powder and 1/4 tsp salt.
Lemon Pepper Fried Pasta Snacks - omit the sugar. Use 1/2 tsp. grated lemon
peel, 1 tbsp. cornstarch, 1/4 tsp. ground black pepper.
Parmesan Fried Pasta Snacks - omit the sugar and lemon peel. Mix together
3/4 to 1 c. freshly grated Parmesan cheese, 1 tbsp. cornstarch, 1/2 tsp.
Italian seasoning and 1/2 tsp salt.
