    Funnel Cakes

    Source of Recipe

    from country cookin

    List of Ingredients

    2 beaten eggs
    1 1/2 c. milk
    2 c. sifted flour
    1 tsp. baking powder
    1/2 tsp. salt
2 c. cooking oil for frying

    Recipe

Beat together the eggs and the milk. Set aside.
Mix the flour, baking powder and salt together and then add to the egg mixture and beat until smooth.
Test the batter to see that it flows well thru a funnel. If to thick, add a little milk. If to thin, add a little flour.
Heat cooking oil to 360 in a deep fryer or use a deep skillet on top of the stove.
Hold the funnel in you left hand, keeping the spout covered with your index finger and fill with 1/3 c. of the batter.
Move over the hot oil and remove your finger; let the batter drizzle over the oil, using a spiral motion, with the rings touching.
Fry until golden brown, turning carefully.
    Drain on paper towel.
Sprinkle with plain powdered sugar or mixed with cinnamon from a sifter.
May be eaten as finger food or served on a plate with maple syrup and butter.
