    Toffee Treats

    Toffee Treats

    for the crust part:

    whole plain graham crackers
    1 c. butter
    1 c. brown sugar

    for the fudge icing:

    3 tbsp. butter
    4 tbsp. cream or 3 tbsp. milk
    (can add a teaspoon or so more if using for easier spreading consistency)
    1 c. brown sugar
    1/2 c. semi sweet chocolate chips

    Preheat oven to 325. Butter a 9x12x2" pan.

    for the crust part:

    Line the pan with the whole graham crackers.
    Trim to fit to the edges of the pan, if necessary.
    Mix the butter and brown sugar together in a saucepan.
    Bring to a rolling boil and then boil for 2 minutes.
    Pour the hot mixture over the graham crackers and spread almost to the edges.
    Bake for 7 minutes.
    Spread the icing on the bars while they are still warm.
    Have the icing ready to go when the bars come out of oven.

    for the fudge icing:

    Place the butter, cream and sugar in a saucepan.
    Bring to a full boil and boil for 1 minute.
    Remove from heat and immediately add the chocolate chips.
    Let sit for 1 minute, then stir to dissolve all the chips.
    Spread quickly on the warm bars before it starts to set, or thicken. If you spend too much time on this, the icing will begin to set up before you are done spreading it.
    Cut while still warm, even if you plan to freeze.
    The more cream you use the more easily it will spread. But if you use too much, it won't set, so add a drop or two at a time to check consistency.

    To make a bar sized pan: make 1 1/2 times the recipe. Use the same cooking times. You can use the same amount of icing, just spread it a little thinner.
