1/4 cup of sugar
2 tablespoons of white wine vinegar
2 teaspoons of grated onion
1/2 teaspoon of dry mustard
1/4 teaspoon of salt
1/4 vanilla bean or 2 teaspoons of vanilla extract
1/2 cup of vegetable oil
Combine all ingredients except oil, in a container of
blender/food processor. Blend until smooth, stopping
once to scrape down sides. With the blender on high,
add the oil in a slow, steady stream.
Makes 2/3 cup.
Serve with fresh fruit or salad greens.
