Bacon Dressing Slaw

Bacon Dressing Slaw
6 strips thick sliced bacon, diced
1 cup onion, diced
1 cup apple cored, diced
1 Tablespoon flour
2/3 cup apple cider vinegar
1/3 cup granulated white sugar -- I used
...Spenda/sugar baking mix (half of 1/3 cup)
1/4 cup chicken broth--I used water
salt and pepper to taste
8 cups green cabbage, shredded--I used
...1 16 oz bag coleslaw mix
3 Tablespoons fresh parsley, chopped
Fry bacon in a large saute pan over medium/high heat until crisp.
Pour off all but 1/4 cup drippings--I used 1 Tablespoon
drippings and 2 Tablespoons butter--
could use Smart Balance with drippings.
Add onion and apple; cook over meduim heat until softened,
about 5 minutes.
Whisk in flour and cook 2 minutes more.
Stir in vinegar, sugar, broth, salt and pepper.
I stopped here and set the apple mixture aside until I
put my pork chops in the oven.
Add cabbage and toss to wilt, 4-5 minutes.
Stir in parsley just before serving.
