This is the way I made catgurrl's Bacon Lettuce +
Tomato Pastaa Salad since I am not too keen on
lettuce. But I love bacon, tomatoes and cheese. I
made this for our Memorial Day and my girlfriend
and her daughter both really liked it, and I thought
it was delicious. This is one that you need to eat
room temperature due to the oils.
1 pound sliced bacon
1/3 cup red wine vinegar
1/3 cup mayonnaise
3 tablespoons Olive oil
2 tablespoons finely minced raw onion
3/4 teaspoon salt
1/4 to 1/2 teaspoon ground black pepper
1, 12 ounce box Farfalle (bowtie) pasta,
...cooked al dente to package directions,
...drain and rinse with cold water
2 pints grape tomatoes, cut in halves
1 - 2 cups Monterey Jack cheese,
...cut into cubes
Cut the bacon into 1/4's. Then slice each 1/4
into 3 strips. Fry bacon slowly until semi crisp.
Drain pieces on paper towels.
Use a medium to large bowl and whisk
1 tablespoon of the bacon fat, wine vinegar,
mayonnaise, Olive oil, onion, salt and pepper
together until well blended. I did not think
this looked too appealing, but the end
vinaigrette is tasty!
Toss pasta with the vinaigrette mixture.
Then add the bacon, tomatoes and cheese and
toss again.
Makes 6 to 8 servings.
