Broccoli Tomato Salad
1 lg. bunch broccoli, separated into florets
3/4 c. fresh mushrooms sliced
2 green onions, sliced
2 lg. tomatoes, cut into wedges
Dressing:
3/4 c. oil
1 garlic clove, minced
1/3 c. tarragon or cider vinegar
1/2 tsp. celery seed
1/4 tsp. Italian dressing
2 tbsp. water
1 tsp. lemon juice
1 tsp. sugar substitute
3/4 tsp. dried thyme
1/4 tsp. lemon pepper
1/4 tsp. paprika
1/4 tsp. ground mustard
Cook broccoli in a small amount of water for 5 minutes. Rinse with cold water and drain. Place in a large bowl; add tomatoes, mushrooms and onions. Combine dressing ingredients in a jar with tightly-fitting lid; shake well. Pour over salad, toss gently. Cover and chill for 1 hour. Serve.
