Good old fashioned egg salad, is a great way to use
leftover Easter Eggs, but it's a nice lunch surpise any
time of year. I think people forget about how good it
is. Use this salad for a sandwich spread, stuff it into
a tomato or celery, serve on crackers, or use your
imagination.
Egg Salad #2
6 hard boiled eggs, peeled
1/2 cup celery, chopped
1/3 cup scallions, chopped
4 Tablespoons mayonnaise
1 teaspoon Dijon mustard
1/4 teaspoon Worcestershire sauce
salt and pepper to taste
Mash eggs and mix all ingredients together until well mixed.
Makes 4 sandwiches or stuffed tomatoes.
