Marinated Cabbage Slaw

You can get the pre packaged slaw mix that has the carrots already in it.
May be made days in advance as it gets better as it sits
List of Ingredients
2 one lb. pkgs. coleslaw mix
1 medium finely chopped onion
1 c. cider vinegar
2/3 c. cooking oil or canola
3/4 c. white granulated sugar
2 tbsp. salt
1 tbsp. garlic powder
Recipe
Mix the coleslaw mixture and the onion together in a container that has a seal.
Place the vinegar, oil, sugar, salt and garlic powder in a medium saucepan.
Bring to a boil while stirring.
Pour the mixture over the cabbage mixture and stir.
It will seem as if there is not enough of the liquid for the amount of cabbage, but as the cabbage breaks down, there will be plenty.
Cover tightly.
Let sit for 2 hours, shaking occasionally while it marinates, then refrigerate.
Makes 6 - 8 servings.
