Mexican Pasta Salad
1, 8 ounce box curly pasta, cook al dente to
...package directions, drain + let cool
1 pound Velveeta type cheese, cut into small cubes
1, 16 ounce can diced tomatoes with chilies
1, 16 ounce kidney beans, drained and rinsed
1 chopped onion
1, 8 or 16 ounce can ripe olives, sliced
Mix all ingredients together in a bowl and
refrigerate. Serve cold.
OR
Melt the Velveeta in the microwave, adding the
tomatoes half way through. Stir well. Mix all
ingredients together and refrigerate. Serve cold.Recipe
